Chick Pea Curry


Fry a diced onion in a little olive oil
add diced red or green capsicum
1 tin chick peas drained
2 cups vegetables diced (feel free to use fresh everything, 
I used frozen as I am post surgery and making things easy on myself)
1 tablespoon curry powder of choice
1 dessertspoon chicken stock powder
1 teaspoon garlic granules
1 tablespoon chives
1/2 cup sultanas
1/2 cup almonds or cashews
1/2 cup coconut cream
1 cup water
salt and pepper to taste
serve with rice or noodles
